The subject spent forty minutes explaining tipping to me. He does not understand tipping. He tips anyway, afraid of a number that changes by city. I asked who sets the number. He said nobody. A rule with no author, obeyed by everyone, enforced by shame. This is the closest thing to religion I have observed here. Filed.
